Today I left school at 11:30 because my yearbook class got cancelled. So then I thought "omg it's the perfect day to cook" and I went to my local walmarts and bought $13 worth of ingredients that I will never use outside of this recipe. And this recipe I made up in my head while walking down the aisles.
I ended up buying some beef broth, stuffed tortellini, an onion, chopped kale, and Italian seasoning. The rest of the stuff I had at home but anyway. My plan was to make soup, like the soup from Olive Garden with the sausage and kale and potatoes? But my soup didn't contain sausage because too much work and I get to tell everyone it's "vegan friendly" even though it contains beef broth. I really want to watch the world burn.
Anyway, I made it and it was really good so I'm putting down all the stuff I used below in order to form a more perfect "recipe" haha get it, a preamble joke...

Macie's Knock You Out & Clear Your Sinuses Soup
what you need
- 1 whole potato, peeled and diced
- 1/4 of an onion
- 3 cups beef broth
- 1 cup diced tomato
- 1 cup stuffed cheese tortellini
- 1/2-1 cup of kale (your preference)
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp red pepper flakes
- dash of salt and pepper
- 1 tbs olive oil or vegetable oil
how you do it, son
First thing you need to do is get that potato peeled and diced into bite size pieces. Throw that in your pot. Then put a splash of olive/veg oil in there and set your stove on simmer and let the potatoes be potatoes for a bit while you do other things.
Next, get that onion. Don't let it see you cry. Cut that thing into 4 equal quadrants. Take one of the quadrants, cut that thang up some more, and throw it in the pot. Be sure to stir to the potatoes and onion every once in a while so they don't stick to the bottom.
Add the beef broth, and don't be shy about it. Then add your tomatoes. The tomatoes are what make it awesome. Turn up your stove to med/high until it comes to a nice boil. Then add all the seasoning. You can always give or take with it to your personal preference. The more red pepper flakes you put in, the hotter the soup will be.
Crank the stove up to med/high and add in the stuffed cheese tortellini. Kinda watch it for a few minutes and stir. You should totally be smelling the soup by now. It should make your nose run. After a good 3-5 minutes of staring at this pot of lava, turn it down to low/med and stir in your kale. Leave the stems out. When the soup calms down to a nice simmer, put the top on the pot and let it cook for about 10 minutes. After the 10 minutes is up, go check and see if the tortellini is soft and enlarged and if the potatoes are soft. If not, stir and cook for another 3-5 minutes.
Then you are done. Congratulations, you have completely ruined your kitchen. Get out a bowl and help yo' self.
